Vegan Chocolate Cupcakes with Coconut Milk Chocolate Frosting


Vegan chocolate cupcakes, no milk, no eggs, no butter.  The frosting is also vegan made with a non-dairy spread and coconut milk.  I used dark belgium cocoa in both the cupcakes and the frosting.  Also non dairy choc chips in the cupcakes and melted some into the frosting.  Sprinkled with edible gold glitter and stars.

Tall Cupcakes











I made this set of three tall cupcakes for a girlfriend's birthday. Chocolate cake with whipped milk chocolate ganache covered in fondant. They are three cupcakes stacked together to form one tall cupcake. I followed the tutorial here to make them by Sugarbloom cupcakes http://sugarbloomcupcakes.blogspot.com/2009/05/tall-cupcakes-tutorial.html They are fiddly and I was not entirely happy with my end result. I think next time they will work out better. Practice makes perfect I guess. Hers are just so good looking and even!

Asian Themed 80th Birthday Cupcakes






















I made these cakes for an Uncle who was celebrating turning 80 years old. The top main cake is a three layer Caramel Mudcake with Vanilla Buttercream. The 100 cupcakes are Vanilla with Vanilla Buttercream and fondant decorations. The peach is a symbol of longevity and the oranges are lucky. Handmade fondant peaches and lucky oranges.

Turtle Cupcake Cake


For my son's 5th Birthday, a turtle cupcake cake to take to school and share. We have a pet turtle so it went in for show and tell on the same day. Chocolate zucchini cupcakes with vanilla buttercream. The turtle is made from cupcakes so it is easy to pull apart to serve.

Mr Men Cake







I made this for my son Noah's 7th Birthday. Marshmallow fondant covered Chocolate Mudcake. The Mr Men figures on the big cake are made from fondant, all edible. The cupcakes are vanilla with buttercream. I found the cute little toys for only $1 each so I stuck them into the cupcakes. The kids then could keep them.

Marble Ice Cream Cone Cupcakes






I made these for the kids the other day Marble Ice Cream Cone Cupcakes. They are perfect for the kids, parties or to take to a school function. The cake batter is baked into ice cream cones. So the entire thing is edible. I didn't add icing but a nice touch would be to pipe for frosting on top with sprinkles to really look like a soft serve ice cream.


I made a marble cake batter of chocolate, strawberry and vanilla. I was aiming for the neopolitan look.


I doubled this recipe and got 16 cone cupcakes.


Marble Small Cakes


60g butter

1/3 cup sugar

1 egg

1 cup self-raising flour

vanilla

1/4 cup milk


Cream butter and sugar.


Add in vanilla.


Beat in egg.


Add flour and milk alternately and mix lightly into a soft dough.


Split equally into three separate bowls. Leave one plain, colour one pink and add cocoa to the third (helps to dissolve cocoa in a little water first before adding to the batter).


Spoon dollops of each batter into cones or papers til 3/4 full. Swirl to form marble effect.Bake in moderate oven for 10-15 mins until cooked.
