Christening Cake

I made this for my daughter's Christening this Sunday. It is a fondant covered caramel mudcake and chocolate zucchini cake with vanilla buttercream

Inside Christening Cake with Recipes

This cake turned out so well. I am pleased with the combination of caramel mudcake and chocolate zucchini cake. They both complement each other and are both equally delicious, moist and cut very well. I use the chocolate zucchini cake for most of my cakes but will now also use this caramel mudcake one as well.

This is my chocolate zucchini cake recipe
Chocolate Zucchini Cake
2 1/2 cups plain flour
2 1/2 teaspons bicarb soda
1 teaspoon cinnamon
3 eggs
2 cups grated unpeeled zucchini
1/2 cup cocoa
1 teaspoon salt
2 cups sugar
2 teaspoons vanilla
1/2 cup milk
3/4 cup butter.
(*Optional add 1 cup chopped walnuts/pecans if you wish, I usually omit just in case nut allergies)
Combine flour, cocoa, soda, salt, cinnamon - set aside.
Beat butter, sugar until smooth and creamy.
Add eggs one at a time, beat well.
Stir in vanilla and zucchini. Alternatively add dry ingredients and milk into zucchini mixture (add nuts now if using).
Pour into greased and floured 9" x 13" (23cm x 33cm) pan. Bake in moderate oven for 45-60 minutes. Cool in pan for 20 mins. Turn out and ice with chocolate frosting. This cake freezes well.

Rainbow Fish Cake


Last month my youngest son turned 2 years old. I made him a Rainbow Fish Birthday cake, like the storybook. Inside it was Chocolate Zucchini Cake with Vanilla Buttercream. Smarties as scales, coloured sugar and gummi fish. I was so lucky to find the gummi fish at the shops and they turned out just perfect for the cupcakes. I tinted some of the buttercream blue on the cupcakes to make it look like the fish were in foamy waves.

Red Bean Cake


This is so yummy. This cake is baked in the oven and made with glutinous rice flour and red bean paste in the middle and sesame seeds on top. I used this recipe. http://www.craftster.org/forum/index.php?topic=225875.0

Italian Meringue Cupcakes


Chocolate mudcake cupcakes in three sizes, large, regular and mini with fluffy Italian Meringue frosting. I used this recipe for the Italian Meringue/fluffy frosting and it turned out great. http://allrecipes.com/Recipe/Fluffy-White-Frosting/Detail.aspx


I am a big fan of the Chocolate Hi Hat Cupcakes which I was planning to try to do. But I thought it might be a bit much for the kids, sugar rush!!! Really don't need that. If you don't know what Chocolate Hi Hats are they are like choc dipped soft serve ice cream like you get from the dairy van or ice cream shop. Except cake and frosting to look like it. I have seen others go so far as to even bake the cake batter into ice cream cones and then top with the fluffy white frosting, then you coat with the chocolate. It is very effective.


I love the way the Italian Meringue sits on the cupcakes. It does remind me of soft serve ice-cream.

Oreo Balls Bouquet


I made these Oreo Balls as well for my friend's birthday dinner to give to the others coming as sort of a goody/loot bag. They are really easy and yummy. Basically just crushed up Oreos and cream cheese coated in chocolate. They just taste like Oreo Cheesecake in a little ball/truffle. I coated them with white chocolate and drizzled with milk/dark chocolate. I used wooden skewers and also added mini cookies and full sized oreos as well. Then I clustered them together to form a bouquet.

Topsy Turvy Cake


My first blog post! Here is to many, many more cakes and posts. Here goes...

This week I made a birthday cake for a girlfriend. There is a group of us and we all take turns at providing a birthday cake when the time comes. It was my turn. I wanted something special, for my special friend. I fell in love with the Topsy Turvy Cake style the first time I saw it. Love it!


I googled and found a demo and used that as a base for my cake. Here is the link to the demo I used http://forums.egullet.org/index.php?showtopic=71115&pid=969488&st=0 I scaled mine down a bit and it is not as large as the one in the demo.


The bottom tier is Chocolate Zucchini Cake, the middle tier is Caramel Mudcake and the top tier is White Almond Sour Cream Cake. Filled with Vanilla Buttercream and covered in White Chocolate Fondant.


I am so happy she loved it!
