Italian Meringue Cupcakes

Chocolate mudcake cupcakes in three sizes, large, regular and mini with fluffy Italian Meringue frosting. I used this recipe for the Italian Meringue/fluffy frosting and it turned out great.

I am a big fan of the Chocolate Hi Hat Cupcakes which I was planning to try to do. But I thought it might be a bit much for the kids, sugar rush!!! Really don't need that. If you don't know what Chocolate Hi Hats are they are like choc dipped soft serve ice cream like you get from the dairy van or ice cream shop. Except cake and frosting to look like it. I have seen others go so far as to even bake the cake batter into ice cream cones and then top with the fluffy white frosting, then you coat with the chocolate. It is very effective.

I love the way the Italian Meringue sits on the cupcakes. It does remind me of soft serve ice-cream.

I just love these, they are sooo cute. And the idea of using merengue is great, as I'm not a huge fan traditional frosting as it's a bit too sweet for me.
